As promised, I’m happy to present you my grandmother’s simple and quick recipe for a fantastic sponge cake!

The sponge cake can be used to make countless sweet preparations, from Zuppa Inglese to chilled desserts, to beautiful ice-cream sundae and all sorts of cakes filled with cream, chocolate or whatever you like 🙂


6 eggs
160 gr of sugar
100 gr of flour
50 gr of potato starch
a sachet of vanilla baking powder

How to make the Sponge Cake

Start by mixing the yolks with the sugar for about 10 minutes. Then whip the eggs whites and add them delicately to the yolks and sugar mix.
Sift together the flour, the potato starch and the vanilla baking powder and then add all to the rest.
Grease a cake pan with the butter and cook in the oven at 180 degrees for about 40-45 minutes. Of course instead of butter you can use baking paper to cook the paste.

Finally let the cake cool and cut it in the middle. For all preparations the sponge cake is then usually moistened with some kind of liquour, such as brandy or rum for example.
Now you can give vent to your creativity and prepare a lot of differrent cakes!
Your sponge cake will surely be better than the one you can buy in any supermarket!
