The Cake with Amaretti, Rum, and Chocolate: a Delicacy from Tuscany

Ingredients

  • 200 gr of sugar
  • 150 gr of butter
  • 100 gr. of flour type 00
  • 120 gr. amaretti cookies
  • 4 eggs
  • 100 gr. of bitter chocolate
  • 1 glass of rum
  • 8 gr of baking powder (half a sachet)
  • some unsweetened cocoa powder

How to make the Cake with Amaretti Cookies

1. Mix the yolks with the sugar

2. Mix the amaretti biscuits, then add the flour, the baking powder, the butter previously melted, and the glass of rum

3. Add the yolks beaten with the sugar

4. Beat the egg whites and add them to the pastry mixing from the bottom upwards

5. Add the chocolate cut in small pieces and blend all very well

6. Bake at 180 °C (360 °F) for 30 minutes.
